Today we had a special guest visitor at The Culinary School! Chef Dana “Sugar Daddy” Herbert, winner of TLC’s Next Great Baker and owner of Desserts by Dana in New Castle, visited with students and held a cake decorating demo! He showed students decorating techniques such as piping and stenciling and shared some of his expert tips on handling fondant, royal frosting and the differences between airbrush and gel frosting colors.
In addition to the demonstration, Chef Dana spoke with students about how he became a successful pastry chef. As a high school student he used to watch his grandmother in the kitchen. He took different food classes in high school, but always thought he would end up in the corporate field like his dad. However, when it was time to go to college he majored in Hotel, Restaurant and Institutional Management at the University of Delaware and aspired to become a restaurant owner. Upon graduation he furthered his education at Johnson and Wales University and obtained a second Bachelor’s Degree in Culinary Arts and an Associates of Arts Degree in Pastry.
After gaining more experience in the field, Chef Dana eventually opened his own business, Desserts by Dana. With no advertising budget, he told the students he grew his business by sending out flyers and through word of mouth. Since opening his business he has appeared in magazines, live TV competitions and, his latest honor, winning TLC’s Next Great Baker!
